Just for Karen, Merry Christmas

Pumpkin Roll
3 eggs
1 cup of sugar
3/4 cup flour
1 tsp cinnamon
1 tsp baking powder
Beat eggs with sugar for 5 minutes. Add pumpkin, flour, cinnamon, and baking powder. Mix well. Grease and flour 10x15x1 inch cookie sheet. Pour in mixture and bake at 375 degrees for 15 - 20 minutes. Then immediately turn over onto a dish towel and roll up lengthwise in towel. Cool for 1 hour.
Filling
1 cup powdered sugar
4 tablespoons butter
6 oz. cream cheese softened
1/2 tsp vanilla
Cream together. Unroll pumpkin roll and spread with filling. Re-roll in wax paper and refrigerate. Slice to serve. This freezes very well. And it takes a little practice to get the rolling and unrolling to work for you but it's worth the time and effort. Enjoy!
